On Sunday I made some fabulous bbq chicken. Here is what I did.
Sauté sliced onion in saucepan with salt, pepper, and oil. When onion is golden take out of pan and put in bowl. Set aside.
Thickly slice chicken (I used boneless and skinless). Place chicken in the same pan as you just cooked the onion. Cook until side is golden then flip to the other side. Cook until that side is also golden.
Add onions back in the pan and drizzle with desired amount of bbq sauce. I used this one (cause no corn and it is delicious).
Stir everything together and reduce a little bit. Then throw in the oven at 400* for a few minutes to make sure the inside is cooked all the way—(I did it till the rest of dinner was done).
