Fodmap frittata

Samantha came to visit and I made this successfully for the very first time. It is wonderfully flexible because of course any vegetables can be used the ones listed below are fodmap approved.

Frittata

12 eggs
vegetables finely chopped  - zuchinni, spinach and peppers. around 2 or 3 cups
sausage
water or milk - hmmm maybe  1/2 to 2/3 cup
potato starch - a couple of tablespoons
seasoning - we used rosemary, salt and basil
Do not add olives like the picture shows. They are NOT fodmad - they have pits.

First cook the sausage and stir fry the vegetables in a cast iron pan, save the spinach for last. When vegetables are soft add the spinach. In a separate bowl mix the eggs, milk or water and seasonings.  The water works fine, I just think it would be better with milk. Except there is NO milk that both Samantha and Sarah can have. Mix in the potato starch as well till all is mixed completely. Pour over the veggies, stir and bake at 350 till done. I think it would be really yummy with a hard sheep cheese mixed in too, OK really any cheese.  But I don't know if sheep cheese is fodmap friendly.
