Carrot Soup

It is well established that I love soup. Well, I am also fascinated with Nourishing Traditions. Here is a great soup she had in her cookbook as best as I can remember it.








Carrot Soup

1 lb carrots
1 onion
4 T butter

Combine in a pot and heat on med low till soft.

Add:
2 t curry and mix in then add:

1/2 t ginger
1 tsp lemon zest
chicken broth either one 32 oz carton or homemade broth maybe 4-6 cups depending on what you have. I have made it both ways successfully.

Salt and pepper to taste.

Puree and serve.

This goes well with the egg frittata or quiche. I have not yet tried this but I think it would be fantastic with fried Indian anything - I will experiment and post.

I also think you can make variations of this soup if carrots are not for you try: sweet potato, cauliflower, tomato.
