Lemon Curd, Butter Free

So apparently there is a lemon curd kick going on. Here is a lovely variation. 

1 c lemon juice
1 1/6 c sugar
9 egg yolks
Pinch salt

Mix the yolks, sugar, and salt together. Set aside. 

Boil the lemon juice. Slowly add yolk mixture. Cook until thick.

It is rather yummy.
