Laura always has joked she sits on the couch eating bon bons when she is home. Here is a ridiculous bon bon. Once, around when Cole was born, Adam saw Abe eating an energy bar and came to me all concerned that Abe was eating squirrel poo. This recipe falls into the squirrel poo category for looks. The proportions are all guesses because I just mixed it up for our drive to Laura's.
1/4 cup coconut oil
3 or 4 tablespoons cocoa powder
1 cup pumpkin seeds (blended into powder)
1/2 cup chia seeds, or so
1/2 cup chocolate chips (mini, if you have them)
1/2 cup coconut flakes
2 Tablespoons honey
Mix it all up in a bowl and press it into an 8x8 pan for bars or form into balls for bon-bons. If it is too dry add more coconut oil or honey. If it is too wet add more cocoa powder or pumpkin seed powder or just put it in the pan and refrigerate it because the chia thickens as it sets and coconut oil will harden in the cold.
