I have been eating lots of pumpkins seeds lately and roasted in lots of butter and salts one of my favorite ways to eat them. You can buy pepitas raw or roasted from Trader Joe's. I also add them to cookies, eat them plain as a snack (I prefer the roasted ones for snacking) and make nut free trail mix with them. I was worried that they would bother my digestion but I have had no problems.
Heat a cast iron pan on high.
Melt a pad of butter on the pan and pour on some pepitas.
Salt well to taste.
Cook, stirring frequently until brown. As a warning, they will pop and some will jump off the pan.

I dropped my camera, it still works but I cannot see any pictures that I take so my pictures will be bit off centered now.
