Mediterranean Inspired Chicken Pate

I have been thinking about finger foods a lot lately.  I have decided that they are going to be my next obsession.  Here is a great savory finger food using chicken pate that I flavored like hummus.  I love hummus, but alack my body does not love it.  This is a great way to enjoy the flavor of hummus without getting a stomachache from the chickpeas.

I like to make a batch of this chicken spread every week.  I eat it with spinach, I eat it with cucumbers, I eat it with an omelet, I eat it plain.  The possibilities are endless. 


Ingredients:


3 chicken breasts
juice of one lemon
1/4 cup of tahini
1/4 cup of oil (olive or canola)
1/2 cup of water
1 tsp of sea salt
1/2 tsp of garlic powder (if you can handle it)
1/2 tsp of citric acid
2 tbs of fresh parsley

Directions:


(1) Boil the chicken breasts.  Let them cool and cut them up.

(2) In a food processor or a blender, add all of the ingredients and let it process until you have a smooth paste like consistency.

(3) Store in the fridge.  This makes enough to store in a pint sized jar.
