Lava cake - Truffle cake

Often I need a "decadent dessert" and this what I frequently make.  I am convinced it is very good for pregnant and nursing women because I seemed to need it more in that stage of life.


This one is gooey!

1 1/2 cup Chocolate chips
2 sticks butter
6 eggs
3/4 cup of sugar (I like mine less sweet maybe 1/2 cup)
1/4 cup gluten free flour  

Melt butter add chocolate chips - let rest till chocolate melts, then mix together.

In mixing bowl beat eggs and sugar (about 3 min).

Whisk flour into chocolate mixture,then add this into the egg mixture.  Mix until combined.

Pour into 6 greased ramekins.  Bake at 375 degrees.  Now how long you bake them depends on what you like.  I really like mine more lava like (very gooey) so I bake them for around 12-15 min.  If you prefer it more like a truffle, bake them longer, like 20 min.  The longer you bake them the smaller the gooey center will be.
