Taco Pie

My family loves this for dinner.  They usually add sour cream and cheese as well, but it is very good without!  I usually make a batch of Pico de Gallo to go with this and I use the Cornbread recipe with a can of corn mixed in.  



Ingredients:

One batch of cornbread (made in a tart pan always looks nice)
Shredded lettuce
Sour cream
Shredded cheddar
Salsa
Chopped olives
Chopped avocado or guacamole

Directions:

Layer all of the toppings on top of the cornbread.  Serve while it is warm.
