Orange Spice Bread

I love to eat breakfast at my desk at work with a cup of licorice tea.  However, I never leave time in the morning to actually make anything.  My solution for the last few months is to make something on the weekends that I can freeze and then slowly eat it as the week progresses.  I typically freeze blueberry pancakes, Christy's waffles, or scones.  It works very pretty well.  This weekend I am trying something new - Orange Spice Bread.  It turned out so well that I may not have any left to freeze because I can't stop eating it.


Ingredients:

1 cup of sugar
1 cup of milk
3/4 cups of loosely packed orange and lemon peels thinly sliced (I took the peel off of two lemons and one orange.  Make sure that you don't leave any white flesh on the peels.)
1/2 cup of raisins
1/2 cup of butter or coconut oil
2 cups of flour (I used 1/2 sorghum and 1/2 potato starch)
1 1/2 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp xanthan gum
1 tsp of pumpkin pie spice (I used Brooke's lovely pumpkin pie mix)
1/2 tsp salt
1 egg

Instructions:

In a medium sauce pan add the sugar, milk, orange and lemon peels, and butter.  Bring to a boil for a few minutes and then take the pan off the unit and let it cool.  After the mixture is cool add the rest of the ingredients and mix well.  Pour the batter into a prepared bread pan and bake for almost 60 minutes.
