Egg-free and delicious. I got this recipe from a friend and they are my new favorite cookie. And not just because I can't eat eggs. They have a nice texture and flavor.
Ingredients:
1 1/2 cups almond flour
1 1/3 cup arrowroot powder
1 1/2 cups sugar
1 teaspoons xanthan gum
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1 cup butter
1/2 cup chia mix (that is 2 tbs chia seeds mixed into 6 tbs water, let sit for about 5 minutes)
2 tablespoons almond milk
1 1/2 teaspoons almond extract
1/2 cup (or so) chopped dried cranberries(these are optional...add nothing or whatever sounds good!)
Directions;
1. Combine the dry ingredients.
2. Add the wet inredients and mix well. Add the cranberries.
3. Refrigerate for at least an hour.
4. Heat oven to 350*. Line baking sheet with parchment or silpat.
5. Form dough into balls, place on baking sheet and smash slightly.
6. Bake for 12-14 minutes. They should be just barely browned on the edges. Let them cool for about a minute of the sheet, then transfer to a rack.
I'm sure you could make these with eggs, if you like. 1/2 cup chia mix equals 2 eggs.
