These are from a book I picked up from the library by Stephanie Rosenbaum.
5 Tablespoons oil or melted butter
1 cup sugar
3/4 cup cocoa powder
1 tsp vanilla
Mix these together in a bowl with a whisk.
1 1/2 c gf flour (I have used sorghum and brown rice, and also brown rice, buckwheat and millet as mixtures. The buckwheat one is drier as a final product so I used 3 medium eggs.)
1 1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon xanthan gum
6 oz chocolate chips
1 1/2 cup water or milk (I used fresh coconut milk)
Whisk in the rest and bake at 350. Maggie and I got 12 doughnuts and 24 mini cupcakes which sort of looked like doughnut holes. The mini cupcakes and doughnuts bake in about 10 minutes.
