Maggie's GF Chocolate Chip Cookies

Maggie made these today and was delighted by the whole process. She wanted me to post them in celebration of her very first solo cookie run. She did a fantastic job. I measured the vanilla and xanthan gum only. Maggie actually prefers chocolate chip cookies without the chocolate chips, so she made a dozen with no chocolate and then put chips in the rest. Abe only saw the chocolate chip free version and was not so excited about Maggie baking. He felt better when he saw this plate.

2 sticks butter, softened
1 cup brown sugar
2 eggs (she found a brown one in the carton from Kroger and was all excited about that)
1 tsp vanilla
3 cups flour (she used brown rice, millet, and a buckwheat blend)
2 tsp baking powder
3/4 tsp xanthan gum
chocolate chips

Cream butter and sugar. Add eggs and vanilla and mix. Add flour, baking powder, and the xanthan gum and mix. Then, only if you want, add as many chocolate chips as you like.
Bake at 350 until not quite done because gf cookies are better underbaked than overbaked.
