Caramel Corn

Here it is.

6 quarts popped popcorn
1 cup butter
2 cups brown sugar
1/2 cup corn syrup
1/2 teaspoon salt
1/2 teaspoon baking soda
1 teaspoon vanilla

Grease a jelly roll pan and preheat the oven to 250.
In your favorite candy-making pot over medium high, melt butter and then add the sugar, corn syrup and salt and bring to a boil, stirring.
Boil 5 minutes without stirring.
Remove from heat and add the baking soda and vanilla. This part is pretty fun.
Put the popcorn on the jelly roll pan and distribute the caramel sauce over it. It may be easier to use two pans. One is pretty full, but I only have one, so that is how I do it here. Rather, that is how Sarah did it here.
Bake for 1 hour stirring every 15 minutes.
Cool and break apart.
