Marshmallows

My kids love marshmallows. Can't say I enjoy them, but that is not the point. In any case I think they make a fun Christmas treat, especially when served with carob sauce and candy. I used crushed peppermints (no corn, no food coloring) and candy coated sunflower seeds (no food coloring). I got the basis for this recipe from a blog Samantha directed me to. It is wellnessmama, it had some good ideas.




4 T. gelatin
1 c. water
1 c. honey
1 tsp vanilla

Add gelatin to 1/2 cup of water (do this in your kitchen aid bowl). Whisk it together a little and let it sit.
Add the other 1/2 cup of water and 1 cup of honey to a saucepan and heat till boiling and to the soft stage (about 240 degrees). Slowly pour the honey/water mixture into the water/gelatin mixture while mixing at a low speed. Once it is all incorporated increase to high speed. It takes a couple of minutes - maybe 4-5 to get to soft peaks.  I am guessing it will take longer with a hand mixer. Spread it onto parchment paper and let it sit for a couple of hours - give it time. The cut it into cubes, I used a greased pizza cutter - worked great. I have read these do not refrigerate well. I will add the carob sauce recipe soon. It is a good one.
