Turkey Breakfast Sausage
These are really good homemade breakfast sausages. I like them especially because I know they are 1. gluten free and 2. not full of unwanted and unnecessary "stuff" (msg, bht, nitrates, etc.) They are a very slight modification of a recipe found in Nourishing Traditions. With a little more modification I think this could work great in fodmaps.
1 lb of ground turkey (I think I actually used 1 1/2 lbs - I got a 4 pack from Costco without any weight on the package)
1/2 onion finely chopped. - my kids suggested I leave this out next time or I might use dehydrated instead - they are less obvious.
1 1/2 tsp of Italian seasoning
1/2 tsp thyme
1/2 tsp sage
1/4 tsp nutmeg
1/4 tsp cumin
1/4 tsp ginger
1/8 tsp cayenne - I used on small dried red pepper crumbled - that was just right for me
1 egg
2 T gluten free bread crumbs - I use the crusts of my bread for this or crackers ground up
2 tsp sea salt
2 T of butter to fry them in (add more if needed)
Mix all ingredients, chill well or just go ahead and make the patties. I cooked about half and froze the other half in patty form in parchment paper and a zip lock bag. I think the cooking in butter makes them wonderful. They browned very nicely and tasted just like I hoped.
