You were thinking this was impossible...but it really works! Yeah! And, of course, it was a fluke that I figured this out.
Ingredients:
2 1/2 cups warm water
2 1/4 teaspoons yeast
1 teaspoon sugar
2 tablespoons oil
2 tablespoons sugar (or not...)
1/3 cup psyllium husks, ground or chia seeds work as well...or a combo
3 cups GF flour blend, plus more for rolling out
1 1/2 teaspoon salt
Directions:
1. Proof the yeast w/ warm water and 1 teaspoon of sugar in medium bowl.
2. Mix together flour and salt in a large bowl.
3. Whisk oil, sugar and psyllium into the yeast mixture. Let sit for about 2 minutes. Mixture will get pretty thick.
4. Mix together wet and dry and knead (yes, you can knead this dough!)
5. Let rise in the bowl until double.
6. Roll out small balls of dough to the desired pita size, using more flour as needed.
7. Bake on a bread stone in a preheated oven (450). You can also bake them on a cookie sheet if you need to. Watch them puff up and pocket. Highly entertaining.
