So, I've been thinking about making No-Bakes without chocolate for a while. I finally got to it---and they are pretty darn good. Since I was bringing these to a kid activity, I made both chocolate and blonde No-Bakes.
Ingredients:
2 cup sugar
1/2 cup cocoa powder
1/2 cup dairy-free butter (or whatever you use)
1/2 cup milk (I used almond)
1 teaspoon vanilla
3/4 cup peanut butter
3 1/2 cups GF rolled oats
Note--if making the blonde version, omit cocoa powder and use a full cup of peanut butter.
Over medium-high heat, bring the sugar, cocoa powder, butter and milk to a boil. Boil for one minute. Add the oats, peanut butter and vanilla and stir well. Drop spoonfuls onto parchment paper and let cool.
