Fresh Strawberry Pie

Always good when strawberries are cheap. Good for me, too, with no eggs. Top with whipped cream or ice cream, or nothing. I used an oatmeal nut crust that is great with fruit.  In the bottom picture, we have Sarah's Pie Crust...made dairy-free.


This pie is made with the Oatmeal Nut Crust


Ingredients

1 cooked crust 
About 1 1/2 pounds fresh strawberries
1 cup sugar
1 cup water
3 tablespoons starch (corn or potato work well)

Crush a cup of strawberries (I usually do this in the blender). Slice the rest.  In a pan combine crushed strawberries, water, sugar, and starch.  Stirring well, bring to a boil and thicken. Place sliced berries in pie shell and pour sauce over the top. Chill.
