 Coconut & Guava GF Cookies

Laura made these for us. I ate them instead of joining the family badminton tournament which was the correct choice since Josh was going to win regardless. 

2 sticks of butter, softened (you can substitute the butter with a plant-based butter alternative like Country Crock's Plant Butter with Olive Oil. It will make the cookie more soft and cakey in a good way)

1.5 cups sugar

4 eggs

2 tsp vanilla

3 cups King Arthur gluten-free flour mix

1 tsp baking powder

1 tsp baking soda

1 tsp salt

3 cups unsweetened coconut flakes

1 cup guava paste cut into 0.5 inch cubes


Cream the butter and sugar. Beat in eggs, one at a time. Beat in vanilla. Add flour, baking powder, baking soda, salt, and coconut flakes and mix until combined. Mix in guava paste chunks with a sturdy spoon (not using the mixer). Form into balls and place on baking sheet lined with parchment paper (or you'll have guava paste to clean off the baking sheet which isn't fun). Bake at 350℉ for 10-12 minutes for standard sized cookies. Larger cookies will take more time. If cookie is too rounded once baked, pat down the dough ball to be more hockey puck shaped before you bake them.

If you only have the wide coconut flakes, chop them up into smaller bits before adding them.
