Zucchini Bread

I have waaayyyyy too much zucchini right now, so we are making this fairly frequently.  Easily doubled.

3 cups flour mix
1 teaspoon xanthan gum
1 teaspoon salt
1 teaspoon baking powder
3 teaspoons cinnamon
3 eggs
1 cup oil or butter
2 1/4 c sugar (or less, I often use half this amount)
1 tablespoon vanilla
2 cups shredded zucchini (or more...shredding is quick and easy in a food processor)
1 cup of chopped nut (optional)

Mix together all of the ingredients and pour into a greased 9 X 13 pan or two 8 X 4 loaf pans.  Bake at 325* for 40 -60 minutes.  The amount of time will depend on the size of pan you use.  How easy is that?
