Blueberry Apple Fritters



I just made these for Adam's birthday party with Emily's and Christy's family.  The kids loved them.  The batch is pretty large, but every time I make them we manage to eat them all.

Ingredients:

1 cup of milk
1/2 cup of water
2/3 cups of sugar
2 packages of yeast (2 1/4 tsp each)
3 cups of tapicoa flour
3 cups of potato flour
2 tsp of xanthan gum
2 tsps of cinnamon
1 tsp of salt
2 eggs
2 apples, peeled, cored and grated
1 1/2 cups of blueberries (fresh or frozen)
1 lemon
1/2 lb of powdered sugar

Instructions:

1. Heat up the milk and water to be warm, but not hot.  Add the sugar and yeast.  Let this mixture sit for about 5 mins.  You will know it is ready when it gets puffy.

2. Add the flour, xanthan gum, cinnamon, salt, and eggs.   Mix in a mixer for 3-5 minutes.  Fold in the apples and blueberries.  The dough will be sticky.

3. On a well floured table, gently pat the dough into a large rectangle.  The dough should be about 1/2 inch thick.  Cut the dough into triangles.  Let the dough rise for at least 30 mins.

4. Fry up the fritters.  Make sure the oil is not too hot so that the fitters and cook all the way through.  Gluten-free items should be well cooked to help them not be gummy. 

5. While the fritters are hot dip one side in glaze.  The glaze is made by mixing the juice of a lemon with the powdered sugar.  Add a little bit of water if the glaze is too thick.
