This Quinoa Salad is a delicious and easy low FODMAPS lunch.
Ingredients:
1 cup of quinoa1 cucumber
1/4 cup green onion, chopped
1/3 cup fresh cilantro, chopped
1/2 cup mandarin oranges
1/2 cup chopped almonds
1 tsp sweetener
1 tsp cumin
juice of 1-2 lemons
1/4 cup oil
sea salt, to taste
Instructions:
(1) Cook the quinoa in 2 cups of salted water. Cool.
(2) In a large bowl add all of the ingredients and toss.
