Gluten-free Tres Leches Cake




This is a cake made quite often in Mexico for fiestas.  It is often made in a 9 X 13 pan because it is a wet cake.  I made it as a layer to make a fancy birthday cake.  It was spectacular!  

Ingredients:
1 1/2 cup GF flour
3/4 teaspoon xanthan gum
1 teaspoon baking powder
1/2 cup butter
1 1/2 cups sugar, divided (or less)
5 eggs
1 1/2 teaspoon vanilla, divided
2 cups milk, divided
1 14 oz can sweetened condensed milk
1 12 oz can evaporated milk
1 1/2 cups heavy whipping cream

Directions:
1.  Heat oven to 350*.  Grease and flour one 9 X 13 pan or two 8 inch pans.  

2.  Combine flour, xanthan gum and baking powder.  Set aside.

3.  Cream butter and 1 cup of the sugar.  Add eggs one at a time and 1/2 teaspoon of vanilla.

4.  Alternate adding the milk and flour mixture until well blended. 

5.  Pour into the pan(s) and bake for 30 minutes.

6.  Let the cake cool.  Invert the rounds onto racks after 15 minutes, if making those.  

7.  Combine the other cup of milk, condensed and evaporated milks.  Pierce the cake several times and pour the milk mixture slowly and evenly over the top.  If you are doing layers, you will use less of the liquid.

8.  Frost with whipped cream (1 1/2 cup whipping cream, 1 teaspoon vanilla, and 1/2 cup sugar)

9.  Decorate with fruit, like peaches or strawberries.  Refrigerate until served.
