Noodles

I love noodles.  It is hard to find a good noodle without rice or corn, so I came up with this recipe. 

Ingredients:

1 cup of tapioca flour
1 cup of potato flour
3 eggs
1/2 tsp xanthan gum
salt

Instructions:

1.  In a stand mixer add the flour, eggs, xanthan gum and salt.  Mix well.   The mixture needs to be soft but strong enough to roll out.  If it is dry (depending on the size of the eggs) you may need to add a some water (be careful and only add a little at a time).  If the dough is too soft the noodles will be very fragile and will fall apart.  




 2.  On a well floured surface, roll out the dough as thin as you can.


 3. Cut the dough into long strips.


4.  Boil the noodles at least 5 mins in a large pot of water.  I like to just add the noodles to a big pot of chicken soup.  Add the noodles slowly so they don't clump up.
