Sarah, this recipe is for you. If you want to blow through your manchego quickly, turn to this recipe. Maggie helped me roll and cut the crackers out until the smell of the manchego overpowered her delicate nose, but she has eaten a pile of them. Apparently they taste better than they smell. These are best fresh.
1 cup grated manchego cheese
1/2 cup tapioca starch
1/4 cup gf flour
garlic salt (I used the one from Trader Joes that you can grind. I think it has some onion and parsely)
maybe a tablespoon of water
Put all ingredients but the water in a mixing bowl and beat. I used my stand mixer.
Mix it until it kind of comes together and then add some water until it forms a ball.
Roll the ball out on a floured surface and cut into small squares with a pizza cutter.
Bake on parchment paper for 10-12 minutes at 350.
They sound yummy. I shall have to try them. I still have some manchego left.
