French Macarons


I don’t remember where I got this recipe, but it makes a great basic macaron.  Perfect GF, grain free, dairy free yumminess.  Fill them with lemon curd, jam, ganache…like I said, yumminess.

1 ¼ cup powdered sugar
½ cup ground almonds (I grind them in the blender until they are fairly fine.  Blanched almonds make for a more uniform color, but I like using unblanched)
2 large egg whites (or 3 small ones)
Pinch of salt
2 ½ tablespoons granulated sugar

1.  Line two baking sheets with parchment.  Spray with oil.  This really helps them not to stick later.  

2.  Stir together almonds and sugar.  Whip egg whites until soft peaks form.  Add almonds/sugar and continue until batter is stiff and glossy.  Add coloring, if you would like.  I don't usually.  

3.  Pipe two inch disks onto the parchment.  You can do this with a large round tip or just a plastic bag with the corner cut off.  Or just use a spoon, but they won’t match quite so well when you put them together.  Let the cookies sit for about 30 minutes or so on the counter.  

4.  Heat the oven to 325*.  Bake them for 9-10 minutes and let them cool right on the baking sheet.  Make sandwiches with filling of your choice.  Yumminess!
