I love warm, homemade tortillas.
Ingredients:
2 cups GF flour (rice-free is fine)
1 teaspoon xanthan gum
1 1/2 teaspoon baking powder
1 teaspoon salt
2 teaspoons oil
3/4 cup warm milk (almond is my favorite)

Mix together the dry ingredients. Add the wet ingredients and mix well. You should have a sticky ball.

Divide into about 8 balls (depending on what size you want) and roll out using extra flour to help it not stick to everything. I like using parchment and plastic wrap as well. Keep the rest of the dough covered as you do this.

Heat a cast iron skillet and cook each tortilla for about 30 seconds per side. Cover the cooked tortillas with a clean towel. This well help them stay soft.
