Homemade Egg Replacer

I like to use chia or flax as an egg replacer when I can, but sometimes you need to mimic the whites more.  This is what I use to get that.

Ingredients:

2 1/2 cups potato starch
1 1/2 cups tapioca starch
2/3 cup baking powder
1/2 cup baking soda

Directions:

Blend everything together well and store tightly closed in a cool dry place.  I use a mason jar, labled with directions.  Use 1/2  tablespoon plus 2 tablespoons of water per egg.  Mix this together before adding to your other ingredients.  Works best when not replacing a lot of eggs.  Similar to Ener-G.
