This is my very favorite soup of all. Mom once told me about a squash soup recipe, that is where I got the idea for this soup. Her description was actually quite different from this soup, but that is the beauty of cooking - lots of wiggle room.
Brooke's Squash Soup
Chicken & Chicken stock - I like my soup very brothy (I know this is not a word, but it should be), so I use a lot of this. I prefer making roasted chicken then using the bones and some of the meat to make this soup. (Turkey is even better!) If that is not possible I also like 4 chicken thighs boiled to make stock and provide the meat - (I only use 2 thighs for the meat and freeze the other 2).
Baked Winter Squash - So my family has yet to realize they are eating squash when I serve this. Unless I put in too much and then I get a little push back. So I have found 1/2 a butternut or 1 small acorn to be sufficient. Bake it and then smash it pretty good when adding to the stock (puree if you are feeding really picky eaters).
Onions and garlic - 1 medium onion 2 cloves garlic
1 tsp of Cinnamon and 1 tsp of Curry
Salt to taste
Vegetables- This is pretty flexible, my favorites are tomatoes, carrots and green beans. I have also used summer squash, spinach or other greens, and celery.
Cook till vegetables are tender. I like to serve this with GF bread and butter.
Note: So just lately I have discovered this is also good with some coconut milk. If I have some of the "water" part because I was using the cream somewhere else, I throw it in here. The cream part is good in it too.
FYI - The soup Mom told me about had the winter squash in chunks, and had navy beans, and maybe a few other differences, that I have forgotten about.
