Caramel

Caramel is a delightfully delicious food. Here are a few variations.

Corn Syrup Free Caramel
3/4 c butter
3/4 c golden syrup
1 1/2 c sugar
2/3 c alternative milk
1 t vanilla

Add all ingredients except the vanilla
Boil until soft ball stage
Pour into a greased 8x8 pan (I like to use parchment paper that is greased)
Once it is cool cut and eat

I like to wrap the caramel in parchment paper to store

If you want soft caramel for dipping apples leave out the vanilla and do not cook as long

If you want a harder caramel to make caramel apples cook to soft ball stage and leave out the vanilla

If you don't have golden syrup and can use corn syrup substitute it one on one and use brown sugar instead of white sugar
