Baked Salmon

So Laura inspired me with her Jicama salad recipe to use the salmon I had in my freezer.  While I admit fish isn't my favorite food, Leah and Daniel seem to like it. So with their interest in mind I have incorporated fish as a regular dinner entree. Well sort of regular.  I find lemon and butter to be my allies in this new fish-dinner effort of mine. This was my result last Sunday.




Baked Salmon

Two fillets of salmon (that fed all of us: 2 adults, 3 kids)

Marinate the salmon for about an hour in:

2 tablespoon melted butter
salt 1/2 tsp
pepper
Italian seasoning 1/2 tsp
garlic (fresh 1 clove or 1/2 teaspoon dry)
2-3 tablespoon lemon juice

To be honest I just dump things in a bowl, but I think I am pretty close in my estimates.

Bake in oven at 350 degrees for about 25 min.  You may need to modify that depending on how thick the fillet is.

Serve this with Laura's jicama salad or just a bed of baby greens, if you do not have a jicama on hand, which I did not.  Boiled potatoes are also nice, because they are so wonderfully easy.
