Pumpkin cookies (no grain, no sugar)
I have been exploring cookies that have no refined sugar or grain and have had some great success. Here is one favorite:
2 1/4 cups of flour (I use 1/2 almond and 1/2 cashew meal- I found it at Trader Joe's - Sometimes I add a little starch that would look like 1 cup almond 1 cup cashew and 1/4 cup potato starch)
1 teaspoon baking powder
1 teaspoon baking soda
1 1/4 teaspoon celtic sea salt
1 1/2 teaspoon cinnamon
1 1/4 teaspoon ginger
1/4 teaspoon nutmeg
1 1/2 sticks butter - room temp
you decide how much (I think I used about 3/4 - 1 cup total) coconut sugar and maple syrup
2 eggs
1 can pumpkin (15 oz)
3/4 cup almond milk
1 teaspoon pure vanilla
Pre heat oven to 375.
Whisk together dry ingredients in a bowl
In mixing bowl mix butter and coconut sugar/maple syrup, add eggs mix, add pumpkin, milk and vanilla mix. Then add dry into wet ingredients, mix until combined. You can either spoon or pipe these cookies onto a parchment lined cookie sheet. I like to add a pecan pressed on top of each. Bake about 12 minutes. They will be a nice cakey cookie.
