Marinade:
2 onions
8 or so garlic cloves
6-12 green onions
1 large jalapeno (or a scotch bonnet...hotter and more authentic)
3/4 cup soy sauce (GF tamari)
1/2 cup vinegar
1/2 cup oil
1/4 cup coconut sugar (or brown sugar or honey)
1 teaspoon cinnamon
1 teaspoon cloves
1 teaspoon allspice (Jamaican, if you can find it)
1 teaspoon nutmeg
2 tablespoons freshly grated ginger
1/4 cup lime juice
Blend well in food processor/blender. Marinate 6 large chicken breasts or several thighs/wings.drumsticks...will serve about 14, so adjust as needed.
Marinate 24-48 hours. Grill until done. Serve over rice (like lime cilantro or Brazilian Rice) covered with Mango Salsa.
