I had some rhubarb and did not know what to do with it so I made this. It is very delightful and a beautiful light pink. It would go with a lot if different things. I ate it with pancakes this morning.
2 c water
1 c sugar
Rhubarb (I used about 5 massive pieces. There was probably an inch and a half more rhubarb in the pot than water)
Boil until soft
Add sugar if needed
