Here is another version of Monster Cookies that I can eat!

Ingredients:
2 chia eggs (2 tablespoons chia seeds w/6 tablespoons water; I'm sure flax eggs would be fine, too)
1/3 cup applesauce (or coconut oil)
1 cup sugar
3/4 cup brown sugar
1 teaspoon vanilla
1 cup peanut butter
1/2 tablespoon baking soda
1/2 tablespoon powder egg substitute (no need to add water)
1 teaspoon salt
3 1/2 cups rolled oats (I used gluten-free)
Chocolate chips
Chopped pecans
Dried cranberries, etc
Directions:
1. Beat together chia eggs, applesauce, sugars, peanut butter and vanilla. Add oats, baking soda, and salt. Mix well and add chocolate, nuts and whatever sounds good.
2. Heat oven to 350°. Drop large spoonfuls on a cookie sheet. Bake for 10-12 minutes. Let cool on the pan for a minute or two before moving them to a cooling rack.
