I have been really enjoying recipes from what I call "paleo-blogs". They are all gluten free and mostly dairy free and in addition use no grains, plus no refined sugar. What more could my digestion ask for - oh yes, they don't use legumes either! I know they have their philosophies, which are fine, but putting that aside, the actual foods work so well for my digestion that I love them. So I had to add a recipe to this blog.
Banana Bread (Paleo version aka no grain)
Disclosure: This recipe is a combination of two I found on line.
Note: I really like coconut flour with almond flour, but in this recipe I just use coconut flour because of the almond butter.
4 bananas
4 eggs
1/2 cup almond butter (you can use sesame or other non nut butter)
4 T melted butter or coconut oil
1/4 -1/3 cup maple syrup -NOTE: I might use 1/2 cup, if I have a picky crowd or the bananas are just not very ripe. This amount was sweet enough for me and Daniel (sweet tooth husband) ate quite a bit too.
1/2 cup coconut flour
1 T cinnamon
1 t baking soda
1 t baking powder
1 t vanilla
sea salt
Topping
4 T butter
2 T coconut sugar
1 t cinnamon
Mix all wet ingredients with mixer. Then add dry and mix till incorporated. Pour in greased loaf pan, or cake pan (I always use a 9 X 9 pan because it cooks faster and more evenly!)
Mix topping ingredients together - blob on top of batter.
Bake in oven at 350 for about 35-40 minutes.
This is not crumbly like some GF items. The texture is nice.
