Another recipe from Josh's family. They always made Christmas cookies that showcased their family heritage. And a lot of them. These are anise flavored, like many of the cookies they made. They taste like Good-N-Plenty candies to me. I should make them for mom!
Ingredients:
3 3/4 cups of powdered sugar (one pound)
4 eggs
1 teaspoon baking powder
4 cups GF flour
2 teaspoons xanthan gum
1/4 teaspoon salt
1 lemon zested
1/4 teaspoon anise oil (1 teaspoon extract)
Directions:
1. Beat the sugar and eggs together. Add the zest, salt and anise oil.
2. Mix together the flour, xanthan gum, and baking powder. Slowly add to wet ingredients.
3. Roll out until 1/2 inch thick. Use a springerlei roller, cookie stamps or whatever to press in a design on cookies. Cut apart with pizza cutter to cookie cutters. Place on cookie sheets that have been greased and floured.
4. Cover with a cloth and let them sit out over night. This preserves the design, because the cookies do rise.
5. Preheat oven to 300*. Bake for 10-15 minutes or until light brown on top. I have better luck with dark pans.
Leigh says they get better with age. She stored them in an airtight container with a slice of apple to keep them moist. I don't have good molds for these, so we pressed them with cookies cutters, k'nex pieces, and whatever we found. We have one cookie stamp that is a bit shallow. Maybe I'll get something better one day.
