Chicken marinara/parmesan

So I was a little desperate for dinner ideas and decided to make this. Surprisingly my kids really liked it.  You can add cheese and it is chicken Parmesan or not and it is marinara- I know very sophisticated.


Marinara Sauce:
2 cans of diced tomatoes
1 can tomato paste
onion - diced
garlic - dried or fresh
seasoning - basil, oregano, etc
salt and pepper
olive oil

Saute onion in olive oil, add tomatoes and seasoning. Simmer. 

Chicken:
Chicken breasts (however many for your needs)
1 egg
gluten-free crackers ground up
salt
olive oil
Pound chicken breasts and salt. Dip chicken in egg and and cracker crumbs. Fry in pan till golden. 

Pour sauce into baking dish and set chicken on top. Bake for about 25 min at 350. If you want chicken Parmesan add cheese (I suggest my favorites - manchego or pecorino romano) and return to oven till it melts. 

Serve over rice noodles or spaghetti squash.
