Imagine I took a picture of some really delicious blueberry muffins and then you will be able to envision the results of this recipe.
1 stick of butter, softened
3/4 c sugar
1 tsp vanilla
1 egg
lemon zest from 1 lemon or a few drops of lemon oil
1 3/4 c flour (I used a sorghum and brown rice mix - I think it is about half and half)
1/2 tsp xanthan or guar gum
2 tsp baking powder
1/2 tsp baking soda
1 cup liquid (juice of 1 lemon plus coconut milk, or all milk)
1 1/2 c blueberries
1. Preheat oven to 375.
2. In a large bowl, beat butter and sugar until light (about 2 minutes). Add lemon zest, vanilla, and egg. Beat until smooth (another 2 minutes or so).
3. Add dry alternately with the wet ingredents.
4. Fold in the blueberries
5. Put batter in the cups of your muffin pan. I like to overfill gf muffins, so I got 12 very full muffins from this recipe.
