Christy and Sarah’s Chocolate Frosting
Ingredients:
½ cup plus 1 tablespoon cocoa
½ cup plus 1 tablespoon boiling water
2 ¼ cups butter
¼ cup granulated OR powdered sugar
½ teaspoon salt
1 ¼ pounds semisweet chocolate, melted and cooled
Directions:
1. Combine cocoa and boiling water. Stir until dissolved. Add in butter, sugar and salt and beat until light and fluffy. Add melted chocolate.
2. Frost cooled cake, cupcakes, cookies, or whatever sounds good.
1 12 oz. package Trader Joe's chocolate chips (dairy free), melted and cooled
1/3 cup cocoa
1/3 cup boiling water
2 tablespoons sugar
1 cup palm shortening
1/2 tsp salt (use a good sea salt to give a more interesting flavor)
1/2 tsp vanilla extract
1. Combine the cocoa, boiling water and sugar. Stir until dissolved. Then follow the directions above, not forgetting the vanilla. I also put it in the fridge for about 10 minutes to harden before I used it.
