Spiced Potato and Vegetable Patties

I love Samosas, but I haven't always like how my GF ones have turned out.  These patties were tasty, easy and deliciously samosa-y.  I liked them a lot!  So did my kids.  Perfect.  Makes about 15-20.


Ingredients:

3 potatoes
1/4 milk (any kind)
1/3 cup flour (helps them hold together, don't be stingy)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder (or not for low FODMAPs)
1/2 teaspoon chili powder
1/2 teaspoon curry powder
1/2 cup or so of chopped veggies (I used peas and corn)
Salt and pepper to taste
Oil for frying

Directions:

1.  Boil the potatoes until soft--about 20 minutes.

2.  Mash the potatoes with all the rest of the ingredients, except the oil.  Adjust seasoning as needed.  And really...season them however you like.  This could go a lot of different directions.

3.  Shape the mixture in to patties.  I used about 3-4 tablespoons per patty.  They should hold together well, but still be soft. If too wet, add more flour; if too dry add a little milk.  If they are too wet, they will fall apart in the oil.

4.  Fry in hot oil until browned and crispy.  You can pan fry them as well, if you like.  Eat while hot; good with chutney.  Samosas without the wrapper!
