Pineapple Chutney Chicken

One of the foods that I dearly miss now that I am enjoying a Low FODMAPs diet is Indian food.  I have of course been trying to work through that. Here is a great pseudo Indian dish without onions and garlic!  The dish does has a fennel bulb.  Fennel is generally acceptable for a Low FODMAP diet, but you should limit your intake to about 1/2 cup.



Ingredients:

1 lb of chicken, diced
2 tbs oil
1 tsp of ground cilantro
1/2 tsp of fennel seeds
sea salt to taste
1 fennel bulb, diced
1 cup of cut up cilantro
1/2 cup of cut up green onions
1 whole pinapple


Instructions:

(1) Brown the chicken in a heavy pan with the oil.  After the chicken is brown add the cumin, fennel, and salt.  Add the fennel and slowly cook until the vegetable is soft and then add the cilantro and green onion.  (Sometimes I also add a pinch of chili powder.)

(2)  As the fennel is cooking cut off the skin from the pineapple.  Remove the core and cut up the pineapple in large chunks.  Place the pineapple into a blender and puree.

(3) Add the pureed pineapple to the chicken/fennel mixture.  Let the mixture simmer for at least 10 minutes.  It needs to reduce down so that it can taste super delicious.  

You can serve this with rice or poppadums.  However, I prefer to eat it with pakoras (as I can't eat rice or lentils).
