My kids like these quite a bit. The dough is rather soft, but the result is a yummy, soft, chewy cookie.
1 cup cocoa powder
1 1/2 cups sugar
1/2 cup oil (or butter, if you can)
4 eggs
2 teaspoons vanilla
2 cups GF flour mix (rice-free works great)
1 teaspoon xanthan gum
2 teaspoons baking powder
1/2 teaspoon salt
1 cup powdered sugar
Directions:
1. Beat together cocoa, white sugar, and oil. Add eggs one at a time. Add vanilla.
2. Whisk together dry ingredients (except for the powdered sugar), and mix into the chocolate mixture until just combined.
3. Heat oven to 350° and line two baking sheets. Scoop dough into 1 inch blobs. The dough is soft. Place in freezer until it firms up a bit. Roll the blobs into balls with you hand and then roll in the powdered sugar. Sarah says two coats of powdered sugar is best.
4. Bake for 10 to 12 minutes. Let cool slightly on pan before moving to a cooling rack. Makes about 4 dozen cookies.
