This is an easy treat to bring to a potluck or party. It makes quite a bit and is flexible. The easiest "chocolate" to use is almond bark. It melts very smoothly and easily. But it has whey (at least all the brands I have seen). So you really can use whatever kind you can eat, but they don't all melt well. White chocolate chips are not all created equally, and some do not work at all.
Ingredients:
One box of Chex--rice and/or corn
One pound of melting chocolate--about 2/3 white and 1/3 dark or milk, or all one kind depending on your taste preferences
One cup broken GF pretzel pieces
One cup peanuts
1. Mix together cereal, pretzels and peanuts in a large bowl.
2. Melt the white chocolate in the microwave or over low heat. Do this slowly and gently.
3. Pour the white chocolate over the cereal and combine well. Spread out onto wax paper to cool.
4. Melt the dark chocolate. Drizzle over the white mixture. Let this cool as well. Break into pieces. Store in a tightly closed container.
We don't eat food coloring (no M&Ms), so the two chocolates help provide some color and flavor variety.
