Monster Cookies

When my husband was growing up his mother would make these cookies every time they went on a long car trip.  We now like to make them when we go on car trips.  However, if I am not careful we will eat the whole full batch within the first couple of hours.

The recipe makes an incredible amount of cookies.  Sometimes I am in the mood to make an entire batch and sometimes I am not.  To give you the ability to have these moods I am providing the ingredients for a full batch and a partial batch.  Emily makes these egg-free by substituting the eggs with an egg substitute and it works great.



Full Batch

6 eggs
1 lb of brown sugar
2 cups of sugar
1/2 tbs of vanilla
1/2 tbs of Karo syrup (use Golden Syrup for low FODMAPS)
1/2 tsp of salt
4 tsps of soda (I prefer baking powder)
1/2 lb of butter (can use a non-dairy substitute)
3 cups of peanut butter
9 cups of gluten-free oats
12 oz of chocolate chips
M&Ms (only if you are not strict about non-dairy or food coloring)

Mix all ingredients together.  Bake at 350 degrees for 10 minutes.

Partial Batch

1 egg
1/2 cup of brown sugar
1/2 cup of sugar
1/4 tsp of vanilla
1/4 tsp of Karo syrup
dash of salt
2/3 tsp of soda
3 tbs of butter
3/4 cup of peanut butter
1 1/2 cups of gluten-free oats
4 oz of chocolate chips
M&Ms

Mix all ingredients together.  Bake at 350 degrees for 10 minutes.
