Homemade Pop Tarts

I never really liked pop tarts in the first place so I am not sure why I decided to make these other than I have lots of homework that I should be doing right now.  I made these for a trip to Boston and I needed some easy snacks (really I ate them as meals) that were easy.  I was surprised that I liked them.  They taste much much better the second day, so I suggest waiting at least one day before eating them.  I liked the ones with jam the best.

This recipe is really just pie crust rolled out and filled with jam and it is not that helpful other than the pictures.

Crust:

Filling:
1 cup freezer jam mixed with a 1 tablespoon corn starch
Some websites suggested cut up fresh fruit but I did not have any to try
Mix together cinnamon, brown sugar and a little flour try 1/2c brown sugar, 2 teaspoons cinnamon and 2 tablespoons of gluten-free flour
You could also try chocolate fillings

Make the crust and whatever filling you want to try

Divide the pie dough into 4 sections and roll out one section into a square.  Cut the dough into matching rectangles about the size of your palm (I found I liked the better smaller rather than bigger).

If desired coat the dough with your left over egg white and add the filling.  How much filling really depends on what you like.  I would go for as much as you can fit in with out it overflowing, a couple of spoonfuls.

Cover with the matching square and seal edges with a fork and pierce the top.

Bake on a parchment paper lined cookie sheet at 350 for about 25 minutes (until the are golden brown).

I stored them in wax paper bags and put them in my purse and it worked great.
