So one of my friends needed cookies and requested snickerdoodles. Here is my adaptation of Martha Stewart's fabulous recipe.
2 sticks butter, softened
1 3/4 c sugar
Mix until fluffy then add
2 eggs
Add the rest of the ingredients
1 c sorghum flour
1 c millet flour
3/4 c starch
1 t xanthan gum
Roll into balls and coat with cinnamon and sugar.
They get really big so space them on the pan.
Bake at 350 for 12 min
Note: these cookies freeze really well. Roll them out and coat with cinnamon and sugar, place in a ziplock bag, and freeze. I placed the frozen cookies on a pan and then cooked about 15 min.
